In celebration of Australia’s continued love affair with gin and pop-up anythings, Bombay Sapphire presents Project Botanicals; a pop-up bar pioneering the art of ‘ginstronomy’ and challenging perceptions of pairing food and gin.  The drinks combine the classic with the custom and Gary Mehigan’s menu has some exciting flavours.

The menu at Project Botanicals will feature 10 botanically inspired Bombay Sapphire cocktails with 10 matching tapas style dishes, each paying tribute to one of the hand selected botanicals found in Bombay Sapphire, from exotic locations around the world; almond, lemon peel, liquorice, juniper berries, orris root, angelica, coriander, cassia, cubeb and grains of paradise.  Look out for the Juniper Sublime G&T served with Blue Swimmer Crab Toast and the Orris Aviation served with strawberries and cream.

Open through until 6 December, on Wednesday-Saturday nights, Project Botanicals is taking over the newly established warehouse space: 64 Sutton Street, North Melbourne.
